How to Make Cauliflower Soup
It is surprisingly simple to make an incredibly delicious portion of cauliflower soup. Not to mention, it is absolutely healthy and good for you! To liven it up, I also added a Parmesan Crisp recipe to blend perfectly into your cauliflower soup. This tasty mix will make a delicious yet simple dinner for any night you are looking for a quick and healthy fix. Children can get their daily vegetables with the cauliflower soup and all without having to complain of their disgust for veggies. This comforting classic will make a memorable meal of any night. It’s versatility to mix many ingredients into the soup makes it open to a multitude of flavors.
- 1 Head of Cauliflower
- 2 Tablespoons of Oil
- 1 Small, Chopped Onion
- 2 Minced Cloves of Garlic
- 1 Quart of Chicken Stock, Low Sodium
- 1/2 Cup of Grated Parmesan
- Salt and Pepper to Taste
To begin, set your oven temperature to 350 degrees F. Next, clean up your cauliflower by removing the thick core and leaves. Coarsely chop up the vegetable and place it aside. In a large saucepan, or soup pot, heat the olive oil over a medium and add in the onions and minced garlic. Cook for about 5 minutes until the mixture softens, do not let it turn brown. Mix into the pan the cauliflower and the stock and bring it all to a boil. Afterwards, lower the heat and cover the mixture and let it simmer. You should cook the soup mix for about 20 minutes. You want the cauliflower to become incredibly soft and see it falling apart. Using a hand-held blender, carefully puree the soup. You can use a blender to puree it in small batches if you do not have the hand-held blender. Return the mixture back into the pot and blend in some Parmesan until the mixture becomes smooth. Season with salt and pepper and keep the soup warm until you are ready to serve it.
Parmesan Crisp Recipe:
- Chopped Chives
- 1 Cup of Parmesan, Shredded
Only chop a small amount of chives, this will simply be used as a garnish on the parmesan crisps.

Using aluminum foil, like a baking sheet completely. In an even and thin layer, spread the shredded cheese onto the sheet. Bake the cheese for a good 10 minutes for it to become crispy and golden brown. After removing the baking sheet from the oven, let it cool on a rack for about 5 minutes. Next, in large pieces, break apart the crispy cheese. In each soup bowl, place a few shards of the cheese and sprinkle a pinch of the freshly chopped chives.
With the exclusion of the parmesan, each serving of the cauliflower soup has about 130 calories. This is incredibly low and rather a very nutritional meal. Adding a side of French bread to dip into the soup really adds to the meal. If you like a little bit of heat, you can also add a pinch of paprika. The soup is low in cholesterol and saturated fats. Not to mention the high levels of calcium, dietary fiber, phosphorous, potassium, Vitamin A, Vitamin B6, and incredibly high in Vitamin C. Making this delicious meal unbelievably healthy.
